I'm an idiot when it comes to cooking, but I've been slowly trying to add more stuff to my repertoire. The other day I learned how to make Mexican rice and it was delicious.
The thing that's so interesting about it (to me, at least), is that it's essentially the opposite of Japanese fried rice (fry first, boil second), which got me thinking that you can basically do whatever you want with it. Does anyone have any good ideas on ways to change up the Mexican rice formula? Like I was thinking I could trade out the tomato sauce for something more Asian-y or cheesy. Any ideas?

You can add chipotle flavored tomato sauce, orr instead of chicken stock use some other kind of sauce. You can also make something similar to a paella, just change up the ingredients.
Rather than something "Asian" I think it might be interesting to take out the tomato sauce completely and maybe try for a more Mediterranean-type flavor profile? I'm not sure what to use instead of of tomato sauce though.
