slice 1/2-3/4 inch thick, soak in buttermilk over night or for a couple hours, drain, dust with sage, then salt and pepper generously, dredge in flour, gentle pan fry
brown onions, deglaze with sweet bourbon, either reserve the onions at this point and make a sauce separately or just add dry mustard, honey, cream, salt, pepper, whisk or stir with fork on heat until desired consistency, add more salt if needed

Measurements:
>Potatoes
1 kg of Potatoes, rinse and scrub thoroughly

>Onions
400 g Onions
50 g Margarine/Oil

>Liver
500g liver
2 tbsp wheat flour
50 g butter

>sauce
1 tbsp wheat flour
1 dl cream
4 dl potato water

Boil potatoes (save the water)

Slice onions. Fry them them on a pan in magarine/oil till clear, set aside in Ovenproof dish at low heat.

Clean the liver of veing and memebranes, cut into half-centimeter thick slices.
Mix flour, salt and pepper, turn liver slices in the mix.

Melt a knob of butter on the pan, fry liver for 5-6 minutter on each side. Add to onions in oven

Keep the gunk in the pan, we’re saving it for the sauce

Sprinkle wheat flour on pan, add potato water, whisk vigorously under heat, as it thickens add cream, salt and pepper to taste (if you have it, whisk in burnt caramel food colour to preference)
