Biltong is the answer. Usually has no sugar or nitrates as it is more slowly dried without heat. It can be hard to find retail outside of South Africa, but it can be bought online. Quick search looks like it's produced in every English speaking country now because of meat shipping regulations.
If I were to open a food business I would consider a biltong shop. I think it's a more pure, superior dried meat product than jerky. It'll probably be more popular than jerky in a generation here in the US.
