I bring this up because I know smoking is disproportionately common in the food service industry. But from what I understand, smokers have far less tastebuds than regular people (about 40%).
Seems kind of odd. Smoking clientele derive less enjoyment from their meal than their non-smoker counterpart. Smoking cooks are preparing food without fully knowing what it tastes like.

Smoking definitely numbs the palate. Most smokers I know have no real appreciation for subtle flavours and just dump a shitload of salt, sugar, ketchup, hot sauce or similar on everything they eat.
Cooks smoke because they are stressed as fuck, often have self destructive tendencies and typically have lower class backgrounds.

I don't know because I don't smoke, but keep in mind that most senses are logarithmic so having half the tastebuds probably doesn't mean they feel "half" the taste.
