Toasted sandwich/pannini. I like using mozzarella, basil, tomato, and pesto.

Beet soup, bread, perogies stuffed with potato/cheese/mushrooms/sauerkraut
I made Quinua and beans with some beetroot, carrots and onions; Pretty tasty and healthy. I think I will stick to this for a while; eat some fruits and nuts to balance it out maybe.
