By vegetarian, do you mean dairy and eggs are allowed? If so, I think I can take a crack at it.

BREAKFAST
>Granola with raisins or dried cranberries, flax seed, and whole milk
>Black coffee, black tea, or herbal tea

LUNCH

Eggs. Frittata, boiled, omelette, scrambled, use your imagination. Add whatever vegetables you like, toast, breakfast potato, tea/coffee

>Lunch

Toasted sandwich/pannini. I like using mozzarella, basil, tomato, and pesto.

Beet soup, bread, perogies stuffed with potato/cheese/mushrooms/sauerkraut

I made Quinua and beans with some beetroot, carrots and onions; Pretty tasty and healthy. I think I will stick to this for a while; eat some fruits and nuts to balance it out maybe.
