The left is regular oatmeal and the right is oatmeal cereal. Why are the ingredients so different?

one is an ingredient in a traditional dish
the other is an attempt at a ready-to-eat product which tastes something like the traditional dish but has a more appealing texture, doesn't require cooking, and doesn't give you shit like scurvy and beriberi if you're dumb or poor enough to eat only that
in general the top third of right is the traditional dish plus the texture improvers, the bottom third of the right is vitamin supplements, and the middle third of right is so that you can pour it out of the box over a month rather than spend 15 minutes daily or find mold on it on day 2
