Grilled is one of my favorite ways to eat trout prifiles the delicate flavor best. Use one of these fish baskets to prevent it sticking to the grill when you flip it. Save the breading/frying for catfish.

Here's an old family recipe
1/2 tsp Oregano
1/2 tsp Cayenne
1/2 tsp pepper
1/4 cup cooking sherry
1/8 cup cooking oil
1 lemon
1 cup cream cheese

Preheat oven to 400 degrees. Mix the cream cheese and herbs/spices together in a bowl. Filet and debone the fish. Either dunk the filets in the mixture or spread the mixture on with a knife. Either way, ensure a nice uniform coating throughout. Spread the cooking sherry and oil on the bottom of a glass baking pan. Place the fish filets evenly spaced. Bake for fifteen minutes or until meat is tender.
