I come from an old established black family from the Sugar Hill neighborhood of Harlem, New York. We were taught that soup is a white invention and I was taught by my momma that we don't need racist foods, like soup, frappuccinos, or "white pizza", in our lives. At home we mainly eat chitlins, watermelon, chicken wings, and baby back ribs. If we are to have catfish it must be "blackened" first and coffee must be served black, of course. Pizza must be "Africanized" by adding bee honey to it, like at Roberta's in Brooklyn (the capital of black culture). The younger generations aren't so strict about this and I have even been known to have a soy vanilla latte to accompany my breakfast of black and white cookies (with the white side broken off and discarded of course - I haven't completely forgotten my heritage lol!)

Actually soup was the primary meal of African-Americans until the 13th amendment. Since the plantation owners were fearful of slave uprisings arming themselves with kitchen utensils, slaves had to share a large communal pot and spoon. Every morning each slave would throw in a share of food that was simmered all day, after which they'd each take turns eating from the pot, upwards of nine slaves eating soup from the large spoon simultaneous. This is also the original of the phrase "chain gang" as the spoon was chained to the pot to keep it from being stolen. After the Civil War white southerners, afraid of reprisals from soupanized negroes, banned ownership of pots by African-Americans; gangs of men went around punching holes in the pots of black people to insure that no soup could be made. However, enterprising blacks quickly found that the holes were perfect for draining and straining food and soon a bustling industry sprung up around for-hire food straining, but John Colander, governor of Mississippi from 1874-1902, stole the idea of a pot with holes in it and patented it. The food straining business was forcibly shut down and African-Americans left the South for better opportunities in the North where their pots with holes in them, now called colanders for reasons unrelated to the governor of Mississippi, were quickly adopted by Italian immigrants to strain their pasta, before which had ironically only been consumed as a soup due to an inability to strain the pasta without significant scalding. This wholesale adoption of colanders by Italians resulted in African-Americans being legally considered Italian, and Italians legally African-Americans, until the Civil Rights Act of 1964.

A stew is literally stewed. To stew something you put just enough liquid to cover the ingredients and then you simmer it for a long period of time in a covered vessel.

There are a few different threads that go together to make it up. A certain amount of French influence probably out of Louisiana and the French speaking Caribbean. Black Power and other afrocentric movements also brought in a tendency to use African derived names and to invent names whole cloth to reject European names. This includes certain popular prefixes (La, Da, Ja, etc). There's also black Islam, both Nation of and genuine. Biblical Christian names are popular too, some of which are mostly popular in the black community. It all sort of combines with phonetic spelling variants to create the picture of Black names in the US today.
