So I finally got a Thermopop instant-read thermometer /ck/ (no was I shelling out for a Thermapen). For those of you that already have one, what are some recipes or techniques that really improve or work best using it?

Made a squid salad with a thai lime chilli and fish sauce dressing. Bottle of gewurtz.
