I use this mix. It makes this perfect middle ground between the American fluffy cake and the French flat crepe. I think it's the oat flour.

Separate the whites and fluff them up, fold them in last.

Sour cream adds tang if you can't find buttermilk

replace sugar with double amount of malted milk powder

Anybody have a good buckwheat pancake recipe? I had some pretty basic ones awhile back at a maple farm, but most recipes are just knockoffs of buttermilks.
