Holy shit I have never seen a recipe that makes me rage like this:

Well, a lot of higher tier food is wasteful. Like demiglace.
But in a case like OP I think I would just use some store bought vegetable stock instead. The only vegetable I will cook down and strain out/throw away is celery.

I don't do this because I'm not cooking for someone who pays. Even for guests, the farthest I'll go is blend them up. I do like to add more carrots at the end because I like their flavor.
