I live in NorCal, and poke has been here forever, BUT, there has been a rise in "poke bars". They're popping up fucking everywhere. The best poke though is still made by Japanese Hawaiian guys in the good sushi bars though. The last time a friend of mine dragged me to a poke bar, it was mediocre. So yeah, I'd say they're a meme/trend/fad whatever you want to call it.
