Making some pulled beef sandwiches for my RPG group tomorrow. I prefer to make my own sauces but I'm tired of the ones I know how to make.

There's just so many options to suggest here. Can you provide any info to narrow it down a little? Is there any style of sauce you want to avoid? What will you be serving the sandwiches with?
Also, isn't pulled-anything sandwiches a poor choice for a role playing food? I'd pick something less likely to drip sauce all over the gaming table.

I generally prefer sauces that have a little heat behind them while still retaining their sweetness. I am very partial to sauces that use vinegar.
Also, I laminate/use plastic covers for everything gaming related. Maps are laminated. Character sheets have plastic covers. Plastic tablecloth. Been playing with messy gamers for many years. Also I fucking loved pulled meat.
I will probably just serve coleslaw or potato salad with it like I usually do.

Sure, eating before would be optimal. But I dunno if your gaming group is anything like mine:
1) It can be tricky to get everyone together at the same time. Eating during the game maximizes time available for gaming on those rare occaisions that everyone gets together.
2) There's usually some fat bastard who ends up eating slow, or eats 2nds, 3rds, and 4ths during the game even if everyone else is already done eating.

I've been doing a balsamic vinegar sauce that is really good. I also do Korean BBQ sauce when I feel like juicing the asian pear. Which is rarely.

Alright, well this vinegar sauce should be a little different. Still not sure how it would pair with beef though.
You need:
2 cups apple cider vinegar
1/2 cup brown sugar
2/3 cup ketchup
2 tablespoons unsalted butter
Hot pepper sauce of your choice
1 tablespoon lemon juice
1 tablespoon Worchestershire sauce
1 tablespoon red pepper flakes
1 teaspoon mustard powder
1 teaspoon salt
1 teaspoon black pepper
Combine it all in a pot, bring to a boil, then turn down low and simmer for 30 minutes while covered. Take it off the hear and stir, allow to cool. Put it in your final container(like a squirt bottle) and refrigerate for as long as you can. Two days is ideal, but you're pressed for time so overnight will have to do.

OP, maybe consider making a sandwich that has a cole slaw that can be tucked inside of it. Vibrant piquant tangy BBQ sauce, even storebought, and then that creamy slaw on top, Georgia style. Since it's beef, maybe horseradish the slaw a bit with some radishes, or mexicanize it with lots of lime zest, cilantro and jalapeno in the slaw. Beef can go asian easy, like another anon said. Get some 5 spice powder into it, alternately, with hoisin glaze. Pickle some cabbage, and hit it with some za'atar and olive oil grilled buns.
Chimmichurri is TDF, and pretty easy in a blender. Warm it a little too, just before serving, or grill your buns with it over the grill.
Sweeten things up by switching out your roll to Hawaiian bread and teriyaking your sandwich, offer some fresh thin slices of grilled pineapple and onions.
