I just kind of guess it because I'm colorblind. I cook it until it's still a bit squishy feeling and doesn't look dry. Probably somewhere in the medium-rare range, but I'm not really sure.

This morning I pan-seared a ribeye and basted it with a little butter and then rubbed it with a slightly-crushed clove of garlic. It came out perfectly medium-rare. I let it sit for a couple of minutes while I fried an egg and heated up some flour tortillas. It was so juicy and tender. I can't stop thinking about it.
