What condiments do you prefer on a burger? It seems to me, the two more popular choices seem to be ketchup and mayo (most Wendy's burgers, the Whopper) or ketchup and mustard (most McDonalds burgers, McDouble, etc) , so what are your thoughts? What do you prefer on your burger?
If it's your run of the mill burger, then ketchup and mustard (with cheese, grilled onions, and maybe pickles as actual toppings).
If it's a fucking amazing patty like what Louis' Lunch in your photograph serves... then no condiments. I don't want any sauces to get in the way of the beef. The tomato and onion are perfect accents.
for me, the classic tomato lettuce onion mayo can't be beat unless you're doing something thematic

For me, it's the BBQ bacon Gouda burger. I'll go by layers from bottom to top:

Spinach, tomato, mayo, mustard, caramelized onions, and cheddar cheese. Sometimes I'll add shit like guacamole or bacon or the like, but that's my standby.

I find it so weird that mustard on mcdonalds burgers is actually a thing. I have never had one in nyc in all my life.
