In a surprise turn of events, I've been hired as a pastry chef at a restaurant even though I have minimal experience and didn't apply for the position. The place produces beautiful food and I feel like an idiot for not knowing much (I never pretended to know anything). Help me feel like less of an idiot.
What basic pastry recipes and techniques should I be aware of? I want to increase my general knowledge.

Try watching couple seasons of The Great British Bake Off. I mean it, the show is fun, contestants are usually very nice and they can redpill you on some basic techniques. Other than that I'd say practice makes perfect, I've been baking for maybe seven years now and there's still room for improvement

if you need to make a meringue, make sure your bowl is clean and there is no yolk in your egg whites.
read your recipe twice and get all your stuff ready before you start, it sucks not being ready for the next step or out of a ingredient.
ask questions. just to make sure your doing it the way they like.
chocolate sells great, tall multi layer of chocolate cake, truffles.
Tall apple walnut pies do well too. Don't cook your apples on the stove top, they are to mushy if you cook them and bake them
if your coming up with desserts get a good baking cook book. I found one at borders some years back for half off called "baking". tons of recipes and pics.
if your burning sugar for creme brulee, "sugar in the raw" works better and less likely to burn black. they sell single serve packets too
before starting the mixer make sure it's on low!

mine doesn't look anywhere near as good but I feel motivated as I learned how to get egg whites to firm up and a few other things
