Resting meat is a great idea. But it takes a fuck of a lot longer then 30 minutes.
...and appealing to authority is silly here. A lot of pro chefs, even very good ones, simply parrot what they were taught. I've seen Gordon Ramsay state several times that one needs to sear meat to seal in the juices, despite the fact that searing meat has nothing whatsoever to do with "Sealing" and instead is done because of the Malliard reaction.
