That was my thought too. Nothing wrong with sous viding a chicken thigh but its a little unnecessary. Thighs are easy to cook and dont dry out like breasts do. Sous viding can be a good way to keep something hot and ready while you prepare other dishes and sides though.
I like to sous vide chicken breasts with the ribs and skin still attached then sear them in a cast iron pan to get the skin crispy. Blow torch is ok but it burns the skin before you have a chance to render a lot of the fat out.
