im in the same boat.. two ways i cook them
what you need:
-some cooking oil
-seasoning - can be salt & pepper; lemon pepper seasoning; or some chicken bbq seasoning you find on shelf
-optional - bread crumbs
(obviously these items cost money - but they go a long way)

1st preparation is in the oven
-pre heat oven to 350-400
-brush chix breast with oil; shake seasoning over chix; then i use bread crumbs which is optional - but i think makes a cheap meal better with texture and all that
-place on tin foiled pan
- cook for 35 minutes

2nd prep is on the grill
-brine chicken (just place in salt water mixture in a ziploc baggie) for 30 minutes; longer is preferred
-brush chicken with oil
-season with what you got
-get grill up to 500 degrees with a medium flame
-grill 8 minutes a side (time may vary depending on heat)

thats it. you can buy 1 lb bag of dry black beans and 5 lb bag of rice for less than 3 bucks together; follow instructions on bag - these take a long while to cook (but saving that almighty dollar is important and is worth it) throw in a can of corn (or prep frozen loose corn) also can of diced tomatoes with green chili (optional) - mix ingredients together after separate prep. bonus: throw in a tortilla and you got a taco. this goes with baked or grilled chix. bon appetite.

i cook two breasts at a time this feeds me for 3-4 days often all week for when i get home from work.

Though generally speaking thighs are cheaper than breasts. Even if you throw away the bones and adjust the price accordingly they are usually still cheaper.

Chopped onions in pan.
Turn heat to low.
Chicken back in pan and cover, flip once.
Remove chicken and sprinkle with paprika.
Turn heat to medium and add sour cream.

I like to make chicken stir fry out of it.

A good way to stuff chicken breast is to use soft butter, mix garlic and herbs into the soft butter, wrap the butter mixture in some plastic cling wrap and shape it into a sausage sort of shape and put it in the fridge to harden. Season with salt and pepper, fry in a pan with a few cloves of garlic and a winter herb (thyme, rosemary, sage, whatever you have). At the end baste with butter and deglaze the pan with white wine.

You don't have to do all of these everytime, e.g. feel free to leave out the wine if you don't have it or don't like it or whatever. The fresh herbs make it more expensive, but you can leave them out, use dried or grow them yourself.

Pic related, with fried potatoes and some raw bell pepper, (you can also add vegetables such as peppers it in the end and roast them off in the juices, but I felt like eating it uncooked in that instance).

Found the recipe I use.

Take Boneless Chicken Pieces in a Bowl and add Soy Sauce, Honey, Orange Juice, Grated Ginger and Sesame oil to it. Mix everything well and Marinate overnight..


Heat a large non-stick pan over medium-high heat. Add Vegetable oil to the Pan and Add marinade chicken pieces to the hot pan, fry until golden brown on both the sides

Take another large non-stick pan, Roast sesame seeds about 1 – 2 minutes and keep a side

Now to the same Non-stick Pan add Butter and Pour reserved marinade sauce, Bring to a boil stirring constantly until slightly thickened.

Add chicken back to the pan and stir to combine. Garnish with fresh Spring onion and a sprinkle of sesame seeds if desired.

I just use one pan though.

Cheese leaking out is a common problem with novelty recipes like this. Honestly, the best suggestion is don't bother with stuffing them with cheese, and instead make a cheese-based side to serve with the chicken, like mac and cheese.
