Its not too much fat...but probably too much heat. Stir vigerously to work the fat back in. If that doesnt do it...hit the pot with a little(like 1 tsp per gal) xanthan gum. Cornstarch slurry will work too but youll have to bring the temp back up where as you wont with xanthan.
