yeah. I have an 8" chef's and 8" santoku from the Grand Prix II line, which is pretty affordable. the only reason they're cheaper than the Classic lines is because the handle isn't wood. the specs for the steel and construction are otherwise exactly the same. You can get both for $120 new (as a set) if you poke around on ebay. Always good deals on brand new knives there.

Classic handles aren't made from wood, only some IKON handles are. I think you mean the handles are not full tang triple riveted. That is indeed something that is not really required for a kitchen knife and often just adds useless weight.
Some good knives are also the Tojiro DP knives, or the affordable Wüsthof SilverPoint series, as well as the IKEA 365+ chef's knife. If you are seriously poor buy some Thai KIWI brand knives. Those are also great for learning how to sharpen.
