It's not as neat. Plus it messes up the knife so you have to wash it. Cheesewire just needs a quick wipe.

A knife can be difficult to use on many cheeses because they stick to the blade. A wire doesn't stick.

Also, like >>9030036 mentioned, the wire is much easier to clean and usually does a neater job.

As a lactard I really don't eat enough cheese to have one of these. They are really efficient though for commercial kitchen work.

Those are different tools for different types of cheese. Some cheese cuts better with the blade type like you posted. Other cheese cuts better with the wire.

I have and use both of those tools.... In the end I mostly just use a knife though.
