What do i do with this eggplant

I bought an eggplant, how do I bake it and what do I put on it. It's about 1lb a little over. Do i cut it into two?

I googled it and it said to cut in half and bake on 400 for 25min. does that sound right? Also can I top the eggplant with paprika and later mix it with siracha sauce ? I dont have many seasonings

i like to score it a bit, put a little bit of garlic and a few chili flakes on

also i would highly recommend not eating the skin, it turns out pretty bad when baking

Alright thank you, I'll scoop it all out and then I can mix it better anyway with the sauce. I've been daydreaming on making this eggplant all day now, hopefully it turns out half decent.

paprika is good on eggplant. smoked paprika is the bomb. idk about sriracha w paprika, marinara is good with cheese though. i like to slice it into circles and fry them a bit bc the texture is too soft for me

If you're trying to make babaganoush that'll probably be fine. I like it sliced into steaks, marinated in teriyaki sauce for about an hour and then grilled.

i mean if you just want to mix it in with a sauce, or making something like baba ganoush then you can just grill them whole for like 15 minutes, let them cool and scoop em out

Cut it in half. Lay it cut side down on a foil lined baking sheet. Spraying the foil is preferred, but not crucial. 25 minutes at 400 is a good start, but I'd personally set it to 425-450. Unless it's on fire, it's hard to over roast. The eggplant will noticeably lose its structure and and begin to sag.

If you don't care about presentation, simply rip the guts out (once it's cooled off a bit) into a bowl or strainer. Don't be frightened, but it's going to look like a sea monster.

cut it in eight wedges and then lay some pork neck on top of it and roast in the oven with low temp (140c until pork is 90c or pullable, should be started in the morning if prepping for dinner)

then serve your pork'n'egg plant with rice
