bun

horseradish

might be boring but let me tell you, having two or three of those after a long day of doing some serious web design is a life saver

>>
>>9020419
Lettuce goes under meat and condiments/pickles go on top of cheese
This prevents a toasted bun from becoming soggy from the juices of the meat/pickles/condiments

Use mayo to protect the bun. Oil (mayo) and water (beef juice) don't mix so it shields the bun.
>>
>>9020459
Oil still soggs the bun
I've been making burgers for years now
The ideal placement of mayo is on top of meat provided you have a nice crisp piece of romaine to shield the bottom bun from any leftover juices after resting the burg
>>
>>9020465
That is unless you toast the bun with the mayo spreaded on the actual bread
I don't like this though, as the may tends to get too dark too fast and has a chewy texture when toasted

The wrong way. Get/make thicker mayo. I properly emulsified mayo shouldn't make shit wet.
>>
>>9020476
Are you sure?
I'm on vacation, but I'll whip up some mayo and toast up some buns to show you exactly what I mean.
It's not much a problem on the top bun when there is less pressure, but if you put the mayo under everything else, the bottom bun will for sure get soggy, especially if it sits in a hot window for more than a couple of minutes
>>
Keep condiments, patties, and tomatoes away from the buns by shielding them with onion, cheese, or lettuce. This keeps your buns from getting soggy due to leakage. Everything else is subjective.
>>
>>9020419
remove mustard ketchup and pickle
add bacon between cheese and tomato

Onion and mayo acts as a great barrier to prevent sogginess in the bottom bun. Cheese holds the pickles very well so they don't slide out. Lettuce between tomato and ketchup soy you don't get that double tomato flavor. Don't put the top bun with the ketchup on it until just before you east.

Come back with some empirical evidence instead of an appeal to authority
It's like you've never actually worked in a kitchen before, let alone one that serves a hundred plus burgers on a weekday

I've got a little insiders secret. Here's how five guys does it.

>If ketchup/mustard/mayo, mayo on top bun, ketchup/mustard on bottom bun.
>If ketchup/mustard but no mayo, ketchup/mustard on both buns.
>If mayo and either ketchup or mustard, mayo on top, ketchup or mustard on bottom.
>If only ketchup, mustard, or mayo, said condiment on both buns.

Then from top to bottom

>Raw onion
>Lettuce
>Pickle
>Tomato
>Any other sauces go here, directly on the patty (hot sauce, bbq sauce, etc)
>Cheese
>Meat
>Bacon
>Peppers
>Grilled mushrooms
>Grilled onions

Of course remove anything you don't want
>>
The traditional way is backwards. Veggies on the bottom, meat on top.
>>
From bottom to top -

>bun (sesame seed, fresh)
>thin layer of sauce of choice (I recommend a mustard/ketchup/mayo mix, switched with BBQ if optional bacon is added)
>Beef patty (none of these 3 inch thick hipster meatloafs the fatties love these days, just a standard sized patty)
>smoked cheese
>optional bacon (minor recipe changes if added)
>red onion, sliced thinly
>pickles, sliced thinly but a layer of them (none of this 2 or 3 shit [skip if using alternative BBQ bacon set up] )
>crispy lettuce
>another thin layer of sauce on the top bun

Perfection
>>
Sometimes I keep the condiments separate and dip the
Bun meat bun creation in what I like.
I also put pickles on the side

Remove all the shit that isn't bread, meat or cheese. Now you have a burger. Doesn't matter how you stack.

That pic is correct, but you're allowed to omit/substitute certain layers.

Example: pickles can become relish if you like relish on a burger.

Mushrooms, sauteed onions etc belong at hte cheese layer.
