OP Here, I'll Start.
I have been making different Liqueurs Artisinally for the past couple years, and I am starting to nail down some recipes that could be marketable.
Its a lot of fun, but damn. Everclear gets expensive.
Thing I learned: Turns out even though honey has very little protein, honey will curdle immediately if high grade alchohol is added. Ruined a big batch on that :(

Have you tried precipitating the honey proteins beforehand? Does it settle? Can you filter it?
