Because the White of the egg supports the yolk.
It wouldn't do much good if the yolk were the same size as the albumen offering no protection.

Potentially you could disable the genes responsible for creating the membranes inside the egg, but it would render them infertile, so it would have to be done with a drug or gene therapy and not transgenics.
