Yeah, they're known for their Gouda. Best Gouda I had I found in Germany called "Old Amsterdam". Very good.

We don't have many restaurants here that serve Dutch food, except for very specific, stylistic choice.

Here's some famous restaurants that serve a different kinds of Dutch food:

>Moeders (translates to mother's) serves traditional Dutch dishes like stamppot (kale, milk and potato stew), hachée (slow cooked beef), pea soup, poffertjes (tiny, fluffy pancakes) etc.

>Wilde Zwijnen (translates to Wild Boars) is a restaurant that uses local, seasonal ingredients and has a different menu every day. Comfy af

>Lt.Cornelis serves oldy time food like quaill, huzaren salade (hussar's salad) and fish dishes. It's very nicely decorated and there is a nice ambience going on.

Also, I would recommend that you go to a snackbar and try things like bamibal (a tasty fried ball of noodles), frikadel, kroket (or croquette) and kapsalon.

There's also a lot of amazing craft beers. I would suggest visiting the Jopenkerk, Bierproeflokaal in de Wildeman and Uiltjesbar.

What about rijstaffel and other indonesian dishes that the dutch adopted in the 18th and 19th century. Aren't those considered Dutch by now?

Just got back from a two week trip to there. Pretty shit in terms of restaurants. Cheese was okay. Fondue places are good.

It's pretty hard to not find somewhere decent (although not traditional Dutch) in any of the major cities.
