Tips for sharpening you knives to a razor's edge?

If you want a literal razor's edge you're going to be working your way up dozens of ridiculously high-grit wetstones and maintaining with a leather strop every cutting session
Razors are sharpened by experienced specialists, even professional knife sharpeners make it a point to train above and beyond their normal technique if they want to sharpen straight-razors commercially.
You don't need that kind of edge on a blade you're tapping against a piece of wood every night.

I agree that a razor edge every time on all blades is autism, but

10 would be potato. You can go from 1k - 10k on 5 stones without feeling much jump at all. 10 stones for a needlessly small 1k grit jump, then toss a 200 and a 500 in there every time for completely unnecessary blade grind down on a razor's edge to get to 12, I guess.

I sharpen the knife I carry less often, but my decent kitchen knives don't take much. 10-15 strokes per side on a generic ass who knows what stone, and then strop them. My pocket knife gets a finer stone but less often. Just try and fail til you find what works for you after going off our advice + maybe 20 seconds of research or calling the manufacturer.

As an avid fisherman it seems to me one knife that could do very well to have a razors edge would be a filet knife. You're not going against the board and unless you're incompetent the edge isn't striking bone.
