For the record having a good butcher open shop near you is a fucking godsend. It's an underrated profession and even then it's saturated by crappy butchers. About two years ago a butcher opened up three blocks from my house and I refuse to buy meat anywhere ese now. Wide selection of meat and cuts. Mutton, lamb, beef, chicken, turkey, squab, cornish game hen, buffalo, pork, venison, and occasionally some weird or more exotic stuff like ostrich, wild boar, elk etc. They make cold cuts that are amazing and I buy for making sandwiches at home and they take sausage pretty seriously there. They can hook you up with all sorts of organ meat, bones for stock, and oxtail/chicken feet/trotters/blood and the like. The only thing I wish is that I had a fishmonger of that quality anywhere near where I live.

Also one time I was getting frisky with stock making and got a shitload of whole rabbits from them and tried to make rabbit stock. Rabbit is not a good animal for stock. Do not make rabbit stock. It is expensive and not good. Just make roast/stuffed/stewed/braised rabbit instead.

The fishmonger is a profession in decline. Nearest fish shop to me stocks pretty meh fish and terrible shellfish. I have to go miles away to get really good shellfish for purchase.
