a little question: how easy or hard is it to grow tea?
from what i've heard it grows best in wet rainy areas
the only tea plantation in america (officially) is in charleston, and i want to maybe create a plantation in the northeast (in a wet area of course)

Its not necessary but is a great part of the experience. Its easiest to do out of a french press, but using a filter straw and out of a gourd or cup os great because you can keep refilling and resteeping all day and get a very concentrated blast of it. Fill it and drink ot fast though otherwise it gets super strong and unpalatable. Look up vid tutorials

Question: what kind of tea is American tea? It tastes nothing like the black tea Asians or Europeans drink.
>>
>>9003042
Generally Sri Lankan, Indian, or African black tea of the assamica variety. It's not that different from what the Brits or the Irish have, really, but they probably get slightly better harvests and blends. It's also more likely to be the CTC process. Asians are generally drinking the Chinese variety and the processing is much different.
>>
I've been drinking bagged tea for entirely life but this thread got me interested.
There's an East-Asian shop nearby that has all kinds of foodstuffs so I'm sure they have tea as well.

pressed tea=/=puerh
any tea can be pressed into a cake, for it to be puerh it has to come from yunnan and be processed in a certain way, what you had was a fuding white cake
>>
>>9001744
stop spreading misinformation, caffeine content in tea is more linked to bud content and cultivar not so much to processing
>>
>>9003553
actually it's kinda related to processing as well, since the tea that are less processed (whites, greens) usually have more caffeine in them than blacks and oolongs

Cold deadens the taste and time brings out more bitter tannins.

There are several keys to unlocking good tea flavor.

1. Whole leaves is king, if you only have cut or bagged shit you're plebeian.
2. Water must be low on calcium, use bottled water for convenience.
3. Temperature. 75°C is proper for most green, 90°C for most black teas.
4. Amount. With whole leaves I do one teaspoon per 200ml or one tablespoon or 500ml.
5. Pouring. Water must be poured onto the tea in circles so it swirls the leaves around to maximize release of flavor.

I'm wondering, how to make good iced tea?
If I just brew some fruit tea and let it get cold, it doesn't taste that good.
I don't want to add sugar in it. It doesn't have to be sweet as some shitty bottled ice tea from lipton, but it still doesn't taste that good.
Any tips? Any recommendations?
>>
>>9015412
Have you ever had good iced tea? Maybe it's just not your thing. If it's bitter, add a little baking soda (don't overdo it) when steeping. You could also use artificial sweeteners if you're avoiding sugar, unless you're specifically going for unsweetened iced tea.
>>
>>9015412
Besides >>9015423 I like doing the method where you brew it double strength then add an equal amount of room temp water and chill. It seems to work pretty well.

Depending on the tea you could also try cold steeping.

>>

>brew it double strength then add an equal amount of room temp water
Are you sure you're not just imagining a difference there?
>>
>>9015448
Could be. I don't know if there's some science reason behind it but it's a common enough method that I've seen it on boxes of tea before.
>>
>>9015448
>>9015467

here, just forgot to put em up last night. here's my favorite first.

>Sun Moon Lake Transitional Organic "Crystal" Jade Oolong Winter 2016

Early infusions had a light nectar flavor, buttery mouth feel, very faint spinach/vegetal aftertaste. Mid infusions moved forward with a strong honey flavor with the light fruit nectar still present. Mouth feel remained similar throughout infusions. After taste "cleared" away for a much lighter flavor, barely present. As mentioned on their website this characteristic is where the "Crystal" name came from. This evolved steadily through the last infusions leading to a near sugar water flavor/feel with honey/nectar flavors heavily present. The buttery mouth feel continued to increase as well. Near the end, only mouth feel and vegetal aftertaste present.

>Bonus for this one
I used these leftover leaves for an iced tea that I forgot about for a day or two. Probably the best Jade Oolong iced tea I've had! Lightly sweet, strong buttery mouth feel, very very faint vegetal/spinach aftertaste. However, u wouldn't waste this tea for iced tea. Use it in a gaiwan first then ice it!

If you like jades, definitely check this out. So far this is my favorite overall and definitely from the winter harvest.

Been buying Japanese tea regularly for a few years. Here are the shops I've dealt with:
O-cha.com is pretty nice. It has some cheaper teas, nice variety and a selection of reasonably priced teaware.
Zencha.net has nice teas too, though they start out with the more expensive grades. Beautiful but crazy expensive teaware. Free standard shipping too, which makes them excellent for small orders.
Maikotea.com has the greatest variety, from very cheap to very expensive, and also lots of teaware and tea snacks.
