I think I'd prefer a cast iron hotplate, retains heat a lot better and heats more evenly.

I think maybe they'd be a cool addition to the outdoor kitchen for breakfast, only. Griddles are even heating for pancakes, omelettes, french toast, that kind of thing, but for a crowd. You could park a cast iron griddle on the regular grill instead. I love some lacey hoecakes! Griddles can get into the game for making a quick flatbread too, oil it up and warm it on the griddle. Think mexican comal and warming up some arepas, or tortillas.
I see in your pic they're doing cheesesteak style peppers and onions, but bleh. I'd much rather get some grill marks and smoke into those items by using a regular grill and slicing them larger. A griddled burger such as pictured should have some grease drip on the coals and them smoke flavor go back into the burger, mmm.
