Do it all in separate steps to cook everything evenly and in small batches so it sears instead of steams. Cook meat, set aside. Cook veg, set aside. Egg, set aside. Then add garlic, ginger, onion, etc. to oil, add rice and fry it, then mix everything together and season.

Idk what to do to fix it, except this part. It should cook in 2 minutes max. If an ingredient won't cook in that time, do it separately beforehand and add it in.
Otherwise speaking, I'd eat that any day. Decent job.

Cook rice first for 12 minutes.
THEN LET IT COOL.
When it's cold or room temperature at least, then you can fry it up.
