I had a bagel and half an avocado. Next thing I know I'm waking up in my chair 15 minutes after having dozed off.
I sleep around 8 hours too, although it might have been closerish to 7 hours last night

OP when you eat, your blood vessels start being full of sugar. this sugar then gets pulled out of your blood system and goes to your cells that need it. The tired feeling is because some of that glucose, is basically what your brain runs on and causes fogginess after eating. Now after a bagel and avocado? Idk, maybe you are pre-diabetes. Do you have diabetic hyperpigmentation? It's a precursor to diabetes.

>diabetic hyperpigmentation
Nope.
I'm familiar with the glucose process that occurs after eating but sometimes it feels that my effects are extreme. My mother was born as a type one diabetic, but I heard that's not hereditary.

I find that if I eat a lot of carbs I get sleepy really quickly. Like if I have a fuckhuge salad my stomach will be full but I won't be tired, but if I have half a pound of pasta I'll go into a food coma. So eat less refined carbs.

You probably have some sort of metabolic disorder.
you probably eat too much and too often.
eat only twice a day, and don't snack. This gives your body enough time to break down and digest eat meal.
