Anyone ever make vanilla extract as opposed to buying it? Super fucking expensive to buy in anything more than an oz or 2.
I'm trying to read wikihows on producing it but does /ck/ have any first hand experience?
use the imitation stuff. it's good enough.
>Buy dried vanilla bean(s)
>cut in half lengthwise
>buy bottle of high proof vodka/grain alcohol
>put split beans into bottle with liquor
>let age a few weeks
Wa la
I use 3-5 beans per 750mL bottle.

leave the beans in the bottle or remove? i thought it was leave them in for 2-3 days then remove and let age for a month or two.
i can get pretty decent beans at some markets here, does the alcohol concentration effect anything?

I've done it before.
Scrape the seeds and mix with honey to make a bean paste. It's far more potent and good for applications where alcohol messes with the end product (breads, ice cream, etc).
Take the husks when you're done, grind them up and soak in 100 proof vodka. Then strain them out after a few weeks. Put it in a dark place or a lightproof glass container. Use this like any other alcohol-based vanilla. Nothing wasted, that shit's expensive.
Don't buy vanilla beans until later this year. There was a major crop failure/shortage last year and the demand has way outstripped supply. Any beans you buy will be overpriced and/or dried out and inferior quality.
