It's like 13-14 I think, it's a lunch menu item. That chicken itself is local pasture raised chicken that I think is decently expensive for us that we carve off the whole bird and then brine for 24 hours.

He doesn't want ridgedly intentional, we're southern contemporary "fine dining" in a city that doesn't really have a genuinely proper fine dining restaurant, and he's pretty militant about not being too careful on how shit falls on the plate. I'm still pretty green with plating for sure but that drizzle is the way he wants it. The only reason I took the picture is because he told me to take it.

It's house made plain yogurt, LJ, salt and chopped dill. The rest of is eng cuke, red wine pickled red onion, cracked olive and then radish. Looking a ton it I think what I did was scoop out the little bit of that dressing and onions and shit and put it on top of my pile at the end. Wups.
