There's lots of things you can do, really, I mean it's basically like an eggy tortilla.

You can fill/roll them with stewed mushrooms, onion and pork and that will just work. The jews like to fill them with cheese and deepfry them, traditionally.
You could even fill them with scrambled eggs, or chopped boiled eggs with butter.
You could spread butter on them, put on cheese and ham/turkey, with some mustard, and it'd be like a nice, warm, rolled sandwich.

I think they sell it at holidays or special occasions in Jewish districts.

It was some thing they carried with them from Poland to America.
Like they'd take what's basically a Russian style blini, put a bunch of cheese on it and roll or fold it into a closed envelope, then deep-fry it.
