I generally use Panko.
If you are going to do it yourself you might as well just make into a round cutlet shaped and flatten it to an even thickness with a mallet before breading it in panko and deep frying.
Chop into asian sized strips and wa la, you just made chicken katsu and can enjoy with rice and bulldog sauce. Better than any tendy.
