If you substitute lemon for lime you use lemon *instead* of lime. I think you mean that this "douche" substitutes lime for lemon.

citrus is prone to being bad at subbing out. in my experience its really noticeable when you use a different citrus than is usual, which can be bad or good.

For the same reason I hate those fucking Meyer lemons, they are nice tasting but they don't taste like a fucking lemon when thats what I want.

I've substituted lime for lemon when baking cheap whitefish. It altered the flavor only slightly.
