I thought it was acorn jelly, but it's too pale and stiff; therefore, I know the triangles are konjac.
The powder could be anything from nutritional yeast to bonito flakes to sawdust, but since they're adding soy sauce, we can expect something savory.
In any case, that probably feels like shit to eat. Whenever I eat konjac, I wake up feeling an intense need to vomit, and actually dry-heaved during one of these episodes.
