There's plenty of peanut butter based noodle recopies if you look for them on the World Wide Web.

Most involve ginger and soy sauce though...and PB is way less expensive than a decent peanut oil and it comes out okay.

I eat this every week once or twice:

-1 lb box of dried pasta shells/rotini/macaroni ($1)
-2 cans of tuna in water ($2)
-6 hard boiled eggs ($1.50)
-1-2 cups of mayo ($2)
-1/2 cup mustard ($.50)
-1 diced red onion ($.50)
-dried onion powder, garlic powder, dried celery, pickle juice ($1)
optional: black olives, tarragon, anchovies paste, frozen peas, carrots, peppers, etc

$8.50 for like 4 pounds of food, and you can serve it with other cheap entrees like chili, hot dogs, meatloaf, chicken patties, etc

also:

buy those large bags of frozen skinless boneless chicken breast, they are like 8-10 dollars. Get some chicken bullion for like a dollar. Boil the two together for at least 2 hours on low heat, making sure the water (or cheep beer) doesn't evaporate all the way. During the last 30 minutes, add a half diced onion, half a diced pepper and any spices you have like garlic, parsley, chili powder, paprika, cayenne, oregano, hot sauce

throw on tortillas, with cheap cheese/salsa, shredded lettuce, sour cream, beans, rice, etc

Tamales, dudes.

They're hard to fuck up. Plenty of room to experiment, especially with the masa. Ingredients are cheap. You make them in bulk (pic related), freeze or refrigerate, and that takes care of your food problem for a while.

I usually have them during breakfast, with eggs over easy. Probably not everybody's thing, but it works for me.

To make a tamale, you start with the dough.

IIRC (it's been a while) the dough is just fresh masa + lard (NOT shortening ffs) + baking powder + chicken stock (some people use water; I like chicken stock for the extra flavor).

There are plenty of tips out there. Like, you're supposed to beat the dough until it's light and airy. To test it, put a piece of dough into cold water, and if it floats, it's ready.

You're also supposed to let the dough rest in the fridge for a while (I think 90 minutes?). It's supposed to be a major improvement, but I've never *not* done that, so I've nothing to compare it to.

Once your dough is ready, you slather it onto a corn husk (or banana leaf). The husk has to soak in water for a while to be sufficiently pliable. After you slather that dough, you put your layer of filling (chicken, pork, (Oaxaca) cheese, jalapeños; whatever sounds good, really). Season it if you must. Then wrap it up so the dough engulfs your filling.

Growing up, I remember my mother used to steam around 30 at a time, make around a hundred over the course of a weekend. I've never made in bulk like that, so I'm not 100% certain, but I'm pretty sure it's the exact same process, just adjusted to scale.

As a matter of fact, a lot of Mexicans will finish cooking and just take the pot, put it in the car, drive around town, and sell tamales out of their trunk. (Buy some if you ever get the chance; they're almost always incredible).

If I were you, I'd make a few small batches of tamales with variations on each, to A. Get the hang of the process (you don't want to make 100 and have to throw them all out), and B. So you can experiment with mixtures/seasonings/fillings and discover what suits you best.

My mother got her recipe from a 90-year-old Spanish immigrant. If you want, I might be able to dig out the exact recipe and post it on here.

If skin on bone in...
8 pieces of chicken or so
Oven to 350 F
Get a stainless pan 10 inches or bigger nice and hot and get some veg oil down until it's shimmering
Put the chicken skin side down, as many as will fit in the pan without crowding too much
Cook until the skin separates easily...probably about 8 minutes
Cook on the other side for about 3
Continue until all chicken is browned
Sautee some thicc bacon cut into lardons
Add 1 lbs of thin sliced white cabbage, a whole onion, and garlic to taste
Sautee until cabbage is wilting and just turning brown
Stir in 2 tbs of whole grain mustard and 1/3 cup cider vinegar cook for maybe a min
Add 3 cups chicken stock and 3 tbs sugar bring to a boil
Turn down to simmer, Nestle chicken skin side up, chicken won't be fully covered
Add 2 bay leaves and some dried thyme
Oven for 45 minutes
Remove bay leaf, chicken and finish sauce with two tbs butter and s+p to taste

My fave recipe that can be cheapened by not using meat:
