How long does regular old salted butter last in the fridge? I don't eat a lot of bread / toast but I used some yesterday that's probably been in the fridge a few weeks. It tasted alright, but a little bit off.

Depends on the temperature.
I keep my house at around 70F, it lasts for well over a week at that temp.
Butter will keep for a long time at fridge temps. It loses its shelf life from being at room temp and being in direct light. You should be plenty fine op.

It will last for years. What you tasted was oxidation, caused by exposure to light and air.

The fat in it goes rancid when exposed to oxygen. The colder it is the slower this process. Thus, it will depend on how it is packaged and how cold your fridge is. I keep mine on the table (1 week), in the fridge door (several weeks), and in the freezer (many months.) I buy it in bulk from a local farmer.
