The main reason is because of the sheer amount of avocados we go through every day. I work at a busy store, and every case of avocados yields 3 shallow 1/3rd pans of guac. We make around 9-10 batches a day, mostly in the morning, and some more in the evening. All of the ingredients need to be prepped, which happens in unison to the avocado blanching, de-stemming/stickering, cutting/pitting, and finally mashing. All in all, I'd say we spend like 4-5 hours (more if its a shitter) on the guac a day, so thats where it really comes from.

But it is too expensive either way.
