I am from New Orleans and my Grandmother used to make, what she called, "Merliton Dressing."

Where "Merliton" was her creole/cajun way of saying melleton maybe? which was also just basically another word for chayote casserole with crawfish tails or oysters.

My grandfather even grew these on the back of his property on a chain link fence. I vaguely remember them as a climbing plant from my childhood.

Now that they have passed, I make this sacred, traditional dish for Thanksgiving.

It is made like any other bread based stuffing, but you cook up chayotes and shrimp, crawfish, or oysters and you throw it in as well. I add some cajun seasonings... Then you proudly pronounce to the world that you have made "Merliton Dressing."

the recipe as maw maw passed it down to me is:

1 cup seasoned italian bread crumbs
2 cups cooked mirliton
1 can cream of mushroom soup
1 teaspoon pepper
2 T minced onion
1 carrot grated
1 cup sour cream
1 tsp salt

bake at 350 for 30 minutes.


I usually ignore most of this cream of msuhroom/seasoned italtian bread crumb BS and make my own proper fucking dressing....

Stir fried with some ginger, garlic and Chinese black beans and pork is tasty as fuck

A friend of mine's parents use it in chunks in their soups. They're Vietnamese, dunno if that's common for other Vietnamese people or whatever. It's very mild, I could take it or leave it.
