Blanch them. About 3 to 4 minutes depending on the density of the potato. To serve, re drop them for an additional 4-5 minutes.
Season and serve.

soak em in water first and double fry
So if you start with russet potatoes, cut those into French fry shape, you rinse them, dry them and fry them twice? Is that the idea?
>>8907300
You don't fry them twice at the same temp.

Double frying is good, but it takes more to get that pic related.

Blanching them in water "roughs up" the surface of the potato. You just have to be careful not to over-cook them.

Those are wedges, you dangus.
>>8907205
Coat them with cum before frying.
>>8907351
They're not even remotely wedge shaped, what's wrong with you?

If you think im about to brine and sous vide some fucking potatoes you must be tripping
>>8907205
You have to put flour on them
>>8907205
Start by rinsing the hell out of your potatoes. Blanch. Cool. Fry. Keep your oil hot!
you bake them like mini weird shaped potatoes
soak water to remove starch
light boil them
leave them in fridge to dry out
lightly fry them in low heat
hard fry them afterwards
heston blumenthal has an episode on cooking the perfect chip ( https://www.youtube.com/watch?v=oMOjpSrOFEQ) . Its a bit too labour intensive for me ,so i skip a few steps.i did however put the chips in the fridge for an hr after blanching but before frying and they came out awesome. only problem is when i feel like homemade chips, i dont want to wait 3 hours to make the forkers
