Electric fryers are shit at holding temperature and rarely hold the temp they indicate. It's why they are so cheap. Even if it is working, you can still drop temperature by throwing in too much food to cook at once...a common mistake with small fry baskets.

The grease isn't bad, I never dab my fries dry either. But the color and texture in your image clearly indicates some are translucent and not crispy, while other bits are burnt.

You can attribute this to improper temperature and varied sized cuts. The thin fries are crunchy from being burnt, while the thick cuts are shiny and translucent, indicating it soaked rather than fried.

That whole batch probably had 3 french fries that were crispy and light.
