Mushrooms freeze well, and intensifies their flavor IMO. Sliced up green onions, some herbs, like cilantro (chopped up) freeze fairly well, as does spinach (whole, for meals where it will be cooked). I keep all these on hand.

Hard rubber, actually. Restaurant supply stores will cut them to order--you can get any size you want. I measured my dishwasher and ordered a couple that were as large as possible would would still fit inside.

It doesn't matter if it's a $3 knife from Wal-Mart or the finest handcrafted Japanese blade folded a million times....glass is harder than steel. And it's pants-on-head retarded to make your cutting board out of something harder than your knife.

It's also stupid to make the board out of something that's hard and therefore risks breaking. What are you supposed to do when you need to break down bones for stock? Do you really want to be swinging a cleaver against a glass board? Fuck no.
