Ok, here you go. Crumpet recipes can differ from family to family, bakery to bakery, but this the crumpet recipe my mom made for us and gave to me, which I use now.

3 cups flour (either all purpose, or half all purpose and half whole wheat if you like that)
1 Tablespoon baking powder
1/2 teaspoon salt
2 Tablespoons honey (or sugar if you prefer)
2 Tablespoons butter
1 egg
1 1/2 to 1 3/4 cups milk

Mix flour, baking powder, salt (and sugar if using). Cut in butter until the mixture has the texture of breadcrumbs. Beat egg with 1 1/2 cups milk and honey. Combine wet and dry ingredients and stir just enough moisten and mix, don't over beat the batter. Batter should be thick, but if it doesn't spread when dropped on the griddle, add some more milk. Drop batter by spoonfuls (large spoonfuls) onto hot, greased griddle. Cook like you would pancakes, waiting until the underside is golden and small holes have appeared, then flip and cook the other side.
If you have leftover batter, or just want to do this, you can thin the batter a little more with milk, and make some larger cakes that can be used instead of bread for a sandwich.
