Cut in half, coat in oil and salt, roast until tender and brown. Delicious. I like mustard and hot sauce on em. Brussels sprouts get a bad rap.

This meal is super simple, but it’s delicious. You'll need:
1 large Lodge skillet and lid
2 chicken leg quarters or 4 thighs
1 chopped onion
Salt/black pepper/paprika
Butter
Chopped garlic
Brussel sprouts
Some olive oil
Pre-heat your oven to 425. Place your cast iron skillet on medium-high heat, allow skillet to warm. Add 1 tbsp butter to skillet and allow to melt. Meanwhile, take chicken and coat in salt/pepper/paprika to taste. Place chicken skin down into now hot skillet and allow to brown for ~10 minutes (until skin gets nice golden color). Remove chicken from skillet. Add garlic, onion, and ½ cup water to butter remaining in skillet. Stir and try to get any crusty bits off bottom of skillet. Place chicken back into skillet, seared side facing up. Cover skillet, then place into oven for 20 minutes. While chicken cooks, slice stumps off Brussel sprouts, then cut sprouts in half. Coat sprouts in olive oil, add a little salt and black pepper. After 20 minutes, remove skillet from oven, add Brussel sprouts, cover again, and return to oven for 15 minutes. During this time, turn on oven broiler to 525. After 15 minutes, uncover skillet and spoon liquid in skillet over chicken skin. Return skillet containing chicken and sprouts to oven, allow to broil for ~8-10 minutes. Remove skillet and enjoy. I'll often save the remaining broth for future dishes.

I love brussel sprouts, my favorite way to have them is to fry them up with some sliced kielbasa.
I wonder if you pickle brussel sprouts if it will turn out good, like saurkraut but with more flavor than just cabbage.

Ever tried chicken stock, beer or white wine as the braising liquid? Feel like you're losing some flavor potential with the water. Sounds good though.

The chicken (especially if you're using leg quarters) cooking in the skillet essentially creates chicken stock that then braises the sprouts. I'm sure white wine would work just fine; might try it next time I make this meal.
