How big around is it? If it's close to burger size then slice off the stem and a little bit of the cap so it will sit flat. S&P. Then cook it on a grill or in a pan just like you would a meat patty and have a mushroom burger.

If it's smaller then hollow it out and stuff it. I suggest using a mixture of sauteed chicken hearts, the chopped up bits of the inside of the mushroom, shallots, and herbs. Top with panko then either deep fry or roast in a hot oven.
