I've only really had Texas style bbq, because I lived in Texas for a bit.

It is one of the shit things about living in the PNW. Oh, there are tons of bbq joints up here. They all suck hard dick. The popular one in town serv3s horrible, dry meat slathered in overly sweet, horrible sauce. There is a place in my hometown, again hugely popular, that is fucking either bone dry, or greasy as fuck. No one up here is willing to take the time to do good bbq, and because any place that opens up is the same level of mediocre, fucking rubes LOVE it.

Fuck. Oh well, at least have the seafood game on point

I lived in NC for years. I personally don't care for saucy smoked meats. I'd rather taste the meat itself. Just never could get a taste for the NC BBQ. Now, some SC gold BBQ sauce I do enjoy, not gonna lie. I like good rubs that enhance the meat, not sweet ketchup sauce that just mask the good stuff
